How was everyone’s Monday? I’m sure they suck for those of you who are working or have started school, but for me, I had a pretty good day. Let’s start where I left off though!
So, Sunday I went out to dinner with my mom and her brother to Hamada of Japan, a Japanese hibachi restaurant. We LOVE hibachi style restaurants. If you aren’t familiar, take a look at this YouTube video. The food is always amazing, but it’s not amazingly healthy. It’s cooked in a ton of oil and a ton of butter. That’s just the veggies, with your meal get soup, salad, veggies, noodles, rice, shrimp, your actual meat or meal, and finally ice cream. That’s probably about a million calories in one meal (exaggeration) Of course, people rarely finish everything but then you have leftovers for four days!
We went to the same restaurant for my birthday last year, when I still claimed I “hated vegetables” So I had soup, a lot of my rice, my shrimp, double noodles (though I didn’t eat them all), my meat which was filet, ice cream, and NONE of the veggies. You get 2 pieces of shrimp as part of the appetizer so those and the small scoop of ice cream are what I ate completely. Everything else I couldn’t finish and took home. This year however, things were much different, in an awesome way! I ate my soup, but still no salad. I just seriously HATE lettuce…I ate all of my vegetables! Well, except the onions. Most shocking, I was enjoying it, a lot! My plan was to fill up on the veggies before I get too tempted with everything else. Then came the noodles which I hardly touched. I probably had about three bites. I ate probably the same amount of rice, all of my shrimp and about a quarter of my meat portion, which I got scallops and filet. Then I ate about half the ice cream. So, that is quite the improvement! My mom was beside herself watching me eat all the veggies, which made me happy, too.
After that, I spent my Sunday night at my boyfriend’s watching Breaking Bad.
Monday, overall, was a bust. I woke up and it was gloomy and rainy. I was supposed to go babysit at 8:15, and at 6:30 it was too wet for me to feel comfortable running. On my way to sit, I enjoyed half a bowl of Overnight Oats packed with apple slices, strawberries, and green grapes. I tried to make up for not running by playing a lot of Just Dance 3 and Wii Fit while I babysat! We also made cupcakes which I had about 3 of…but aside from that I snacked on unsalted dry roasted peanuts and strawberries. For dinner when I got home, I made awesome super packed steak and salmon quesadillas. Extremely similar to the other Mexican themed foods I have going on, but still delicious! I had two quesadillas which left me feeling full.
I lounged around for a bit before going over to a friends where we got really Pinterest crafty. If you follow healthierhopeful on Instagram, you’ve seen my crayon creation! We also had our way with a lot of glitter. I splurged with this fantastic dessert her mom makes, though it’s not very healthy! Pretzels on the bottom, cream cheese and cool whip in the middle and strawberries with jello on top. I can’t wait to make a modified version for myself to enjoy at school!
I got home, watched another episode of Biggest Loser and hit the hay. For breakfast this morning I made a batch of Oatmeal Protein pancakes, but I didn’t have my faithful silicone circle rings, so I made a bunch of minis! They are just so cute. I had a mini breakfast of three, topped with two strawberries and a tablespoon of pineapple Chobani.
I have a lot of cleaning to do today for my mom, but I should be checking in around lunch! Until then!
